This banana bread is seriously freaking amazing!
We love treats in our house so thankfully with recipes like this paleo, gluten-free banana bread, we can still indulge while sticking to a healthy lifestyle and nutrition plan. Bananas are one of my favorite natural foods to use in baking gluten free and paleo options because they are: always in season, cheap to buy, and contain natural sugar that intensifies the riper they get.
This recipe is so easy to make and so delicious, I promise you'll want to eat the entire thing...And even if you did, the entire loaf has less calories, sugar, and fat than a slice of cake from your favorite bakery.
PALEO CHOCOLATE CHIP BANANA BREAD RECIPE
PALEO FRIENDLY GLUTEN-FREE GRAIN-FREE LOW SUGAR

TIME: 55-60 MINUTES ( 5 MINUTES PREP + 50 MINUTES BAKE )
- 3 spotted bananas, mashed
- 3 eggs
- 1 TBSP vanilla
- 1 TBSP honey (optional)
- 1/4 c. coconut oil, melted
- 1 + 3/4 c. almond meal
- 1/4 c. coconut flour
- 1 tsp. salt
- 1 tsp. baking soda
- 2 TBSP. cinnamon
- 1/4 c. dark chocolate chips or carob chips
Pre-heat oven to 350 F. In large bowl, blend together wet ingredients. In medium bowl, stir together dry ingredients (except optional chocolate chips). Slowly add dry mixture to wet mixture and mix well.
TIP: If bananas are super spotty, you may not need the added honey (#winning)!
Stir in optional chocolate chips to batter. Line two mini loaf pans with parchment paper and pour batter into pans.
Bake 45-55 min.
