October is here and so is the season of root vegetables. Root vegetables are veggies that grow in the earth rather than on a tree. Some fall favorites include: beets, carrots, and sweet potatoes. Root veggies are denser and more filling than the lighter summer vegetables and are perfect roasted, in soups, or in stews.
If you are new to cooking, try roasting some fall vegetables for an easy "one pan" meal. Roasting vegetables is also a super easy way to meal prep for the entire week (just add a protein source!) and very little mess (one pan to clean!).
October is also one of the most colorful months of the year for produce. Get creative and have fun with your meals as the fall brings a jewel toned rainbow. Reds, oranges, purples, dark green...Fall food is beautiful so make the most of your meals with the produce in season!
